Recipe: Chilli & Mustard Baked potatoes

Baked potatoes are such a classic. We have topped them up with a chilli garnish that features our Oregano Seeded Mustard.


This will be a killer side dish to share with the team!



Recipe: Chilli & Mustard Baked potatoes


Time: 30 minutes


Serves: 4 or 5 (side dish)


Ingredients:

  • 6 medium sized potatoes

  • 2 large tablespoons of Oregano Seeded Mustard

  • 3 tablespoons of olive oil - *We recommend Extra Virgin Olive Oil from @Byron Bay Olive Co.

  • 1 or 2 teaspoons of chilli flakes (depending on the level of heat preferred)

  • 1 teaspoon of paprika

  • Salt & pepper


Method:


  • First step, cut all potatoes in half.

  • Make a few transversal cuts alongside the flat or inside of each halved potato. When making this cuts, be careful of not cutting all the way through, so the piece can stay together. About ½ the distance deep is a good mental reference.

  • Rub some olive oil, salt & a pinch of paprika over the potatoes and lay them on an oven tray.

  • Oven (pre-heated) at 180 degrees celsius, and place the tray. About 20 to 30 minutes should be enough. But as a reference, you want the top to look a little golden & crispy.

  • While the potatoes are baking, mix in a bowl the Oregano Seeded Mustard, the chilli flakes, the paprika and the olive oil. Mix this well together.

  • Once the potatoes are golden looking and well cooked through, plate them and top them up with the mustard mix you have prepared on a side.

  • Adjust with salt and ready to be served!
